Essential Ingredients for Your Healthy Lentil Sandwich Bread

Preparing this nutritious loaf requires just five core ingredients, each playing a vital role in its unique texture and flavor. Here’s what you’ll need:

  1. Uncooked Lentils: The star of our show! I typically use common brown or tan lentils, readily available at most grocery stores. However, feel free to use green or black lentils if those are what you have on hand. They provide the bulk, protein, and structure.
  2. Tapioca Starch: This acts as a binder, helping to create a cohesive dough and a tender crumb. Potato starch is an excellent substitute if tapioca starch is not available.
  3. Psyllium Husk: A crucial ingredient for grain-free baking, psyllium husk provides essential fiber and structure, mimicking the binding properties of gluten. It helps the bread hold its shape and gives it a satisfying chewiness. (Don’t worry, I’ll provide alternatives if you don’t have psyllium!)
  4. Vegetable Oil: Just one tablespoon of a neutral vegetable oil (such as olive, safflower, or avocado oil) adds a touch of tenderness and moisture to the bread. If you prefer an oil-free version, simply substitute this with an extra tablespoon of water.
  5. Baking Powder: Our leavening agent! This helps the bread rise and achieve a light, airy texture. For a truly 100% grain-free loaf, ensure you use a certified grain-free baking powder.
  6. Water & Salt: Basic necessities for hydration and flavor, which complement our main five.

Each ingredient is carefully chosen to ensure a perfect balance, resulting in a bread that is both nutritious and incredibly satisfying.

Gathering your simple ingredients is the first step to a delicious, healthy bread.

Let’s Bake: Crafting Your Grain-Free Lentil Bread

Making this lentil bread is surprisingly simple, though it does require a bit of foresight for soaking the lentils. This crucial step softens the lentils, making them easier to blend into a smooth batter and ensuring the best possible texture for your finished loaf.

Step 1: Rinse and Soak the Lentils for Optimal Texture

Begin by thoroughly rinsing your uncooked lentils under cold running water. This removes any dust or debris. Once rinsed, transfer them to a large bowl. Cover the lentils generously with water, ensuring there’s at least 1 inch (2.5 cm) of water above them. Allow the lentils to soak for a minimum of 2 hours, or ideally, up to 24 hours. Soaking not only aids in blending but also improves digestibility.

Step 2: Drain and Rinse Plumped Lentils

After soaking, the lentils will have plumped up considerably. Drain them thoroughly using a fine-mesh colander. Give them another quick rinse under cold water to ensure they are perfectly clean and ready for blending.

Properly soaked and drained lentils are key to a smooth batter.

Step 3: Blend the Lentil Batter to a Silky Smooth Consistency

Transfer the drained lentils to a high-speed blender. Add 1/2 cup (120 mL) of fresh water, along with the tablespoon of oil (or extra water for an oil-free version) and the salt. Begin blending, stopping frequently, especially at the start, to scrape down the sides of the blender. Continue blending until the mixture is completely smooth and creamy, resembling a thick pancake batter. Patience here ensures a uniform texture in your final bread.

Blending until perfectly smooth ensures a uniform and delightful bread texture.

Step 4: Incorporate Remaining Dry Ingredients

Carefully transfer the smooth lentil batter from the blender into a large mixing bowl. While you *could* attempt to add the remaining ingredients directly to the blender, the batter is quite thick and sticky at this stage. I highly recommend transferring it to a bowl first, as it makes mixing in the tapioca starch, psyllium husk, and baking powder much more manageable and ensures everything is evenly incorporated without overworking your blender. If you don’t have a powerful high-speed blender, this step is especially crucial to protect your appliance!

Mixing the final ingredients in a bowl allows for better control and consistency.

Step 5: Prepare Pan and Spread Batter Evenly

Line a 9×5-inch (22.5 x 12.5 cm) loaf pan with parchment paper, allowing for some overhang on the longer sides—this will make it incredibly easy to lift the baked bread out. While you can bake without parchment, the sides of the loaf may brown more intensely. Either way, the bread will be delicious! Scrape the thick batter into the prepared pan and spread it evenly with a spatula. Then, gently tap the pan firmly on your countertop a few times to release any large air bubbles, ensuring a dense and uniform crumb.

This simple step helps to ensure an even bake and a beautifully formed loaf.

A smooth top and even spread ensure your loaf bakes beautifully.

Step 6: Bake to Golden Perfection

Preheat your oven to 400°F (200°C). Once hot, slide the prepared loaf pan into the middle rack of the oven. Bake for approximately 50 minutes. The bread is done when it’s beautifully golden brown on top and sounds hollow when you gently tap its surface. The aroma filling your kitchen will be your first clue to its perfection!

This straightforward baking process yields a glorious loaf with a hearty crust and tender interior.

The golden crust indicates a perfectly baked loaf, ready to be cooled.

As soon as the bread comes out of the oven, remove it from the pan and transfer it to a wire rack. Leaving it in the hot pan can result in a slightly soggy bottom, and no one wants that! Allowing it to cool on a rack ensures air circulation, promoting an even texture throughout.

Cool Completely and Enjoy Your Homemade Bread

The final, and perhaps most challenging, step is to let your beautiful loaf cool completely on a wire rack. This is crucial for achieving the best texture; slicing warm grain-free bread can sometimes lead to a gummy consistency. Once fully cooled, your only remaining tasks are to slice and savor!

You have the freedom to slice the bread as thin or as thick as you desire. For hearty sandwiches, thinner slices work wonderfully, while medium-thick slices are ideal for a satisfying piece of toast. This bread is incredibly filling, so adjust your slice thickness accordingly. I absolutely adore this bread for its versatility and wholesome goodness, and I’m eager to hear your thoughts once you give it a try!

Happy Baking, everyone!

5-Ingredient Lentil Sandwich Bread (Vegan, Gluten-Free, Oil-Free Option)

By: Camilla

An amazing 5-ingredient lentil sandwich bread that is grain-free, sugar-free, and vegan! Made with whole lentils, it looks and tastes like whole wheat bread.

Prep Time:
10 minutes
Cook Time:
50 minutes
Total Time:
1 hour
Servings:
1 loaf (14 slices)

Ingredients

  • 1.5 cups uncooked lentils (I used tan/light brown lentils)
  • Water to cover lentils (for soaking)
  • 1/2 cup water (for blending)
  • 1 tablespoon olive oil (or more water for oil-free)
  • 3/4 teaspoon fine sea salt
  • 1/2 cup tapioca starch
  • 1 tablespoon whole psyllium husks
  • 2.5 teaspoons baking powder (certified GF, as needed)

Instructions

  • Rinse the lentils to remove any debris and then place in a large bowl. Fill the bowl with enough water to cover the lentils by at least 1 inch (2.5 cm). Soak for at least 2 hours or up to 24 hours. Drain the lentils and transfer to a blender.
  • Preheat oven to 400°F (200°C). Line a 9×5-inch (22.5 x 12.5 cm) loaf pan with parchment paper (leaving an overhang). Grease or spray exposed interior sides of pan.
  • Add the 1/2 cup water, oil (or extra water) and salt to the blender with the lentils. Process, stopping several times to scrape sides and bottom of blender, until completely smooth.
  • Scoop the lentil mixture into a large bowl. Stir in the tapioca starch, psyllium husk and baking powder until completely blended. Spoon batter into prepared pan, smoothing the top. Give the loaf pan a bang on countertop to release any large bubbles. Re-smooth the top, if needed.
  • Bake in the preheated oven for 48 to 53 minutes until golden brown and the bread sounds hollow when tapped.
  • Remove bread from pan and cool completely on a wire rack. Slice and eat as desired!

Notes

Storage: Store the cool bread, tightly wrapped, in an airtight container at room temperature for 2 days, in the refrigerator for 1 week, or the freezer for up to 6 months.

Other Lentils: You can use other varieties of lentils in place of the common brown/tan variety (e.g., split red lentils, green lentils, black lentils). For best results, measure 300 grams of lentils rather than going by cups.

Oil-free Option: The oil gives the bread tenderness, but if you do not eat oil, replace with an equal amount of water. You may want to consider replacing the 1/2 cup plus 1 tablespoon water with an equal amount of non-dairy milk (one that has some fat in it) to make up for the missing oil. If you choose to use full-fat, canned coconut milk, I recommend replacing no more than 2 tablespoons of water.

Psyllium Substitutes: Psyllium husk works best in this recipe, giving much needed structure in the absence of grains, gluten and eggs. If you do not have it, use 4 teaspoons of flaxseed meal or ground chia seeds. The finished bread may dip—just a little bit—in the center with these substitutes.

Tapioca Starch Substitutes: An equal amount of potato starch can be used in place of the tapioca starch. While I have not made this with arrowroot, an equal amount of arrowroot powder should work, too.
