  • 1 15-ounce can fire-roasted tomatoes & their juices
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon freshly cracked black pepper
  • 1 15-ounce can chickpeas, rinsed and drained
  • 1 medium avocado, halved, peeled, pitted
  • Optional: 1 tablespoon extra-virgin olive oil
  • Large handful of fresh parsley or cilantro leaves, roughly torn

Instructions
