- 1 cup (237 mL) water
- 3 tablespoons (39 g) chia seeds
- 3 tablespoons (20 g) flaxseed meal
- 1 tablespoon baking powder
- 3/4 teaspoon fine sea salt (optional)
Instructions
- Place buckwheat in a large bowl; pour boiling water over until fully covered. Let stand for 20 minutes (the buckwheat should begin to soften and break down). Drain thoroughly and rinse under cold water in a colander.
- In a small bowl, combine 1 cup of cold water with the chia seeds and flaxseed meal. Stir well and let stand for at least 5 minutes to thicken into a gel.
- Preheat oven to 325°F (160°C). Line 3 small loaf baking pans (approximately 5×3 inches) with parchment paper, leaving an overhang. Lightly grease or spray any exposed sides of the pans.
