Crafting Your Porridge: Simple Steps for Delicious Results

Let’s dive into the incredibly easy process of making this nourishing baked porridge!

Step 1: Combine Dry and Wet Ingredients

Begin by combining all of your dry ingredients—coconut flour, flaxseed meal, cinnamon, and salt—in a large mixing bowl. Whisk them together thoroughly to ensure even distribution. Next, gradually stir in the water, mashed ripe bananas, and vanilla extract. You might notice the mixture seems quite liquidy at first, but don’t worry! Coconut flour is remarkably absorbent and will quickly begin to thicken the batter. It can absorb significantly more liquid than traditional grain flours, so patience is key here. After mixing, let the batter stand for about 10 minutes. During this time, the coconut flour will work its magic, transforming the mixture into a thick, stiff consistency.

Regarding sweetness: I find that very ripe bananas provide ample sweetness, especially once the blueberries bake and burst. However, if you have a sweeter tooth, feel free to add 1-2 tablespoons of maple syrup or your sweetener of choice at this stage.

And for those thinking, “Bananas aren’t my favorite!”, fret not! I’ve included a variation in the recipe notes for using unsweetened applesauce as a direct substitute. This flexibility ensures everyone can enjoy this delicious porridge.

Step 2: Incorporate Baking Powder and Berries

Once your porridge mixture has thickened after its brief rest, it’s time to stir in the baking powder. This crucial ingredient will provide the lift needed for a perfectly fluffy baked texture. Gently mix it in until just combined. Next, spread the batter evenly into your prepared 9-inch square baking pan, which should be lined with parchment paper and lightly oiled on the exposed sides for easy removal.

Now for the blueberries! You have two options: you can either stir them directly into the batter before spreading, or, as I prefer, scatter them over the surface once the batter is in the pan. Scattering them on top allows for beautiful visual appeal and ensures some berries will burst delightfully on the surface. If you’re looking for an added layer of texture and a nutty crunch, consider sprinkling a few tablespoons of pepitas (pumpkin seeds) on top. They not only add a lovely toasted flavor but also contribute a vibrant pop of color.

Step 3: Bake to Golden Perfection

Place your pan into a preheated oven at 375°F (190°C) and bake for approximately 50 to 55 minutes. You’ll know it’s ready when the porridge is deep golden brown and feels set in the center. The aroma filling your kitchen will be irresistible!

The resulting texture is truly unique—a wonderful hybrid between baked oatmeal and a rich bread pudding. It’s soft, moist, and utterly satisfying. Trust us, it tastes even better than it looks!

Step 4: Cool, Cut, and Enjoy

Once baked, allow the porridge to cool in the pan for at least 20 minutes. This cooling period is crucial for the squares to set properly. Using the parchment paper overhang, gently lift the entire baked porridge out of the pan and transfer it to a cutting board. While the baked porridge holds together well, it still needs gentle handling when warm to prevent crumbling. Once completely cooled or chilled, the squares will be much firmer and easier to handle and serve.

Cut the large slab into 9 even squares. These versatile squares can be served warm, at room temperature, or chilled. They make an excellent breakfast, a satisfying snack, or even a wholesome dessert. We are confident that you will absolutely adore these comforting porridge squares!

Keto-Friendly Adaptation: Enjoying Porridge on a Low-Carb Diet

Adapting this delicious baked porridge to a keto-friendly diet is incredibly straightforward, requiring just a couple of simple swaps:

  1. **Banana Substitute:** Replace the mashed bananas with an equal amount of unsweetened applesauce. While bananas offer natural sweetness, they are higher in carbs. Applesauce provides similar moisture and binding properties without the added sugars. If you desire extra sweetness, simply add a keto-friendly sweetener (such as erythritol, stevia, or monk fruit sweetener) to taste.
  2. **Berry Choice:** Blueberries, while relatively low in carbs compared to many fruits, can still add up. For an even lower sugar and carb count, swap the blueberries for an equal amount of raspberries or blackberries. These berries are excellent keto choices, offering vibrant flavor and antioxidants with fewer net carbs.

We’ve meticulously calculated the macros for the keto option using blackberries, so you can easily track your nutritional intake. This ensures you can enjoy a comforting, flavorful baked porridge while staying true to your ketogenic goals.

Grain-Free Blueberry Baked Porridge (Vegan)

By: Camilla
Grain-free blueberry baked porridge, made from coconut flour & flaxseed meal! It is oil-free and vegan, plus a keto option is included.
Prep Time: 10 minutes
Cook Time: 55 minutes
Total Time: 1 hour 5 minutes
Servings: 9 big squares

Ingredients

  • 2/3 cup coconut flour
  • 1/3 cup flaxseed meal
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1 2/3 cups water
  • 1 cup mashed very ripe bananas (see notes for options)
  • 2 teaspoons baking powder (certified gluten-free, as needed)
  • Optional: 1 to 2 tablespoons sweetener of choice
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • Optional: 2 to 3 tablespoons pepitas

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 9-inch square baking pan with parchment paper, leaving paper overhang on both sides (for easy removal later). Lightly oil or spray the exposed sides.
  2. In a large bowl, combine the coconut flour, flaxseed meal, cinnamon, and salt. Stir in the water, mashed bananas, (optional) sweetener, and vanilla until completely blended. Let stand for 10 minutes to allow the coconut flour to absorb the liquid and thicken.
  3. Stir the baking powder into the batter; spread evenly into the prepared pan. Scatter with blueberries, gently pressing them into the batter. If using, sprinkle with pepitas for extra crunch.
  4. Bake in the preheated oven for 50 to 55 minutes until deep golden brown and set at the center. Cool at least 20 minutes before lifting out of the pan (using the parchment paper overhang). Cut into 9 squares. Serve warm, room temperature, or chilled.

Notes

Storage: Store the cooled squares in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 6 months.

Banana Tips: It will take approximately 2 large bananas to equal 1 cup mashed. Be sure to use very ripe (lots of brown on the peel, very soft) bananas for optimal sweetness and texture.

Banana Options: An equal amount of unsweetened applesauce can be used in place of the mashed banana. However, the squares will not be as sweet, so you will likely want to add some of the optional sweetener.

KETO OPTION: (1) Replace the banana with unsweetened applesauce; (2) Replace the blueberries with an equal amount of blackberries or raspberries; (3) If adding sweetener, use a keto-friendly sweetener (dry or liquid).
