What is Amaranth? A Deep Dive into this Ancient Supergrain

Amaranth, small and subtly tan, holds a rich history as a staple food for the pre-Columbian Aztecs, playing a role in their diet similar to quinoa’s importance for the Incas. Beyond its historical significance, amaranth is truly a remarkable food that deserves a spotlight. While it may not generate the same level of buzz as quinoa, it proudly offers many of the same incredible health benefits, if not more.

The Aztecs, with their profound understanding of natural foods, believed that consuming amaranth not only provided essential sustenance but also significantly boosted energy and physical strength. Modern scientific research now confirms their ancient wisdom. Amaranth seeds are exceptionally high in protein, typically ranging from 13 to 15 percent, making it one of the most protein-dense grains available. Furthermore, it’s an excellent source of dietary fiber, which is crucial for digestive health, and boasts an impressive array of micronutrients including calcium, iron, potassium, phosphorus, zinc, and vitamins A and C. This comprehensive nutritional profile makes amaranth an invaluable addition to any healthy diet, particularly for those seeking plant-based protein and essential minerals.

These tiny amaranth seeds pack a mighty nutritional punch.

Beyond its health benefits, amaranth is wonderfully delicious and incredibly versatile in the kitchen. When cooked, it transforms into a cozy, creamy porridge with a texture reminiscent of cream of wheat, yet it remains entirely gluten-free. For a fun twist, amaranth can also be popped into the world’s tiniest popcorn – a fantastic topping for salads, or a crunchy addition to homemade rice-crispy-like bars and other treats. Today, however, we’re taking amaranth in a slightly different, equally delightful direction: a sweet and nutty breakfast cookie designed to deliver both incredible taste and a substantial protein boost to kickstart your morning with sustained energy.

Step-by-Step Guide to Baking Your Vegan Amaranth Breakfast Cookies

For precise measurements and the full ingredient list, please refer to the complete recipe card below.

Step One: Prepare the Amaranth Porridge Base

The foundation of these delightful breakfast cookies is a creamy amaranth porridge. Begin by combining water, uncooked amaranth, and a pinch of fine sea salt in a small saucepan. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25 to 30 minutes. Stir occasionally to prevent sticking. The amaranth will absorb the water and transform into a thick, creamy texture, similar to a rich, warm cereal. Once cooked, transfer the porridge to a medium bowl and stir in the salt until thoroughly blended. Allow it to cool slightly; you can even prepare this step a day or two in advance and store it in the refrigerator, saving you precious time on baking day.

Step Two: Create Your Own Fresh Oat Flour

While your amaranth porridge is cooling, take 3/4 cup of the rolled oats and process them into a fine flour. A food processor or a high-speed blender works perfectly for this task. Grinding your own oat flour ensures freshness and allows you to control the texture. If you’re sensitive to gluten, remember to use certified gluten-free rolled oats for this step to maintain the gluten-free integrity of the recipe.

Step Three: Preheat Oven and Prepare Muffin Pan

Preheat your oven to 350°F (180°C). Prepare a standard-size muffin tin by greasing or spraying 9 cups. This ensures that your breakfast cookies release easily and maintain their perfect shape after baking. Using paper liners is also an option for even easier cleanup.

Step Four: Combine All Remaining Ingredients

Once the amaranth porridge has cooled, it’s time to bring all the flavors together. To the porridge, stir in the freshly ground oat flour, the remaining 1/4 cup of whole rolled oats, your chosen vanilla plant-based protein powder, coconut sugar for a touch of natural sweetness, non-dairy milk (such as oat, almond, or cashew milk), the chopped dried fruit, and 1 tablespoon of the chia seeds. Mix thoroughly until all ingredients are well blended and a thick, uniform batter forms. The mixture will be substantial, which is exactly what you want for these hearty cookies.

Step Five: Portion and Prepare for Baking

Carefully divide the thick batter equally among the 9 prepared muffin cups. Using a spoon or a small spatula, flatten and smooth the tops of each portion. This helps create an even bake and a neat appearance for your finished cookies. Finally, sprinkle the remaining chia seeds over the tops of the batter in each cup, adding a lovely visual appeal and an extra boost of fiber and omega-3s.

Step Six: Bake to Golden Perfection

Place the muffin tin in your preheated oven and bake for 25 to 26 minutes. You’ll know they’re ready when the edges turn a beautiful golden brown and the tops feel dry and set to the touch. Avoid overbaking to keep them moist and chewy on the inside.

Step Seven: Cool and Enjoy

Once baked, carefully transfer the muffin tin to a wire rack and allow the breakfast cookies to cool in the tin for about 10 minutes. This initial cooling period helps them firm up and prevents them from crumbling when removed. After 10 minutes, gently remove the muffins from the tin and transfer them directly to the wire rack to cool completely. Cooling fully is important for optimal texture and storage.

Frequently Asked Questions About Vegan Amaranth Breakfast Cookies

  • How Should the Vegan Amaranth Breakfast Cookies Be Stored? For optimal freshness, store your vegan amaranth breakfast cookies in an airtight container. They will keep well at room temperature for up to 3 days, in the refrigerator for up to 1 week, or in the freezer for up to 3 months. For frozen cookies, simply thaw at room temperature or warm gently in a microwave for a quick, comforting treat.
  • What Can I Use in Place of the Amaranth? If you don’t have amaranth on hand, an equal amount of cooked quinoa can be used as a substitute. Quinoa shares many nutritional similarities with amaranth and will provide a comparable texture and flavor profile to the cookies.

They boast moist, soft interiors complemented by slightly crispy, golden edges. The amaranth imparts a distinct warm, nutty flavor that is beautifully accented by the bright, sweet notes of dried fruit dispersed throughout each bite. The chia seeds on top also add a subtle crunch.
  • Can I Double the Recipe? Absolutely! This recipe yields a modest batch of nine breakfast cookies, which is perfect for a smaller household or for individual meal prepping. However, if you have a larger family or wish to have more on hand for the week, you can easily double the recipe. Just ensure you have enough muffin tins or bake in batches.
  • What Kind of Dried Fruit Works Best? Feel free to get creative with your dried fruit! Chopped apricots, cranberries, raisins, cherries, or even finely diced dates would all be delicious additions, adding both sweetness and textural contrast.
  • Can I Add Nuts or Seeds? For an extra layer of crunch and healthy fats, you can incorporate 1/4 cup of chopped nuts like walnuts or pecans, or additional seeds such as pumpkin or sunflower seeds into the batter. This would further enhance the nutritional value and texture.

Happy baking, eating, and moving, everyone!
