Hello everyone! Are you ready to dive into a world of sweet indulgence without compromising your dietary choices?

This month, I embarked on a mission: to create a show-stopping vanilla layer cake that is both vegan and grain-free. It was a challenge, but one I took with open arms and a whisk in hand.

After countless attempts – let’s just say over 50 test batches, with batter experiments splattered across my kitchen! – I finally achieved the perfect balance of flavor, texture, and dietary compliance. Was it worth all the effort and floury mess? Absolutely!

If you’re not in the mood for a layer cake, this recipe can easily be adapted to make 2 dozen perfect cupcakes. Just adjust the baking time accordingly, and you’ll have individual servings of deliciousness in no time!

Important Notes Before You Start Baking

Before we jump into the recipe itself, there are a few crucial things to keep in mind to ensure your baking success:

  1. A Unique Recipe: My primary goal was to develop a rich, golden, and truly decadent vanilla layer cake that is both grain-free and vegan. While you can find plenty of recipes for gluten-free and vegan vanilla layer cakes, this one specifically avoids all grains. To my knowledge, this is the first genuinely grain-free and vegan vanilla layer cake recipe!
  2. A Celebration Cake: Let’s be clear – this isn’t a health food cake. This is a celebration cake, meant to be enjoyed on special occasions. It’s rich, sweet, and designed to rival traditional butter-laden, all-purpose flour layer cakes. Think birthdays, graduations, weddings – moments that deserve a truly special treat.
  3. Precision is Key: As I mentioned earlier, achieving the perfect result took many experiments. Success relies heavily on using the exact ingredients in the correct proportions. Substituting ingredients or altering the measurements can lead to a baking disaster. So, stick to the recipe as closely as possible!

The Secret’s in the Flour: What Flours Do We Use?

After what felt like a million different combinations, the perfect blend of flours and starches for this cake turned out to be: chickpea flour, almond flour, and potato starch.

If you’re not a fan of chickpea flour, don’t worry! This cake doesn’t taste like chickpeas at all. Trust me; my picky 12-year-old can vouch for that!

The rest of the ingredients are pretty standard: granulated sugar (I prefer unbleached natural cane sugar, but any fine cane sugar will do), baking powder, salt, non-dairy milk + vinegar (to create a non-dairy “buttermilk”), vegetable oil, and vanilla. Simply whisk the dry ingredients, add the wet, and then introduce the star of the show: aquafaba.

Decoding Aquafaba: What Is It?

If you haven’t heard of aquafaba, don’t fret! It’s simply the liquid from a can of chickpeas. But here’s the magic: it can be used as a substitute for egg whites! Paired with baking powder, it’s precisely what this cake needs to rise to those celebratory heights. In the absence of grains, gluten, and eggs, it’s nothing short of a culinary miracle.

You’ll need 2/3 cup of aquafaba, which you can typically get from a single 15-ounce can.

Using an electric mixer, beat the aquafaba on high speed for 4 to 6 minutes until it becomes very light and fluffy. Soft peaks should begin to form when you lift the beaters from the bowl. If you’re new to aquafaba, prepare to be amazed – it looks remarkably like whipped egg whites!

Gently fold half of the whipped aquafaba into the combined batter to lighten it. Then, carefully fold in the remaining aquafaba, taking care to preserve the airiness of the whipped mixture.

Baking and Cooling: The Final Touches

Divide the batter evenly between two 8-inch round baking pans. Make sure to line the bottoms with parchment paper and grease or spray the sides to prevent sticking.

Bake in a preheated 350°F (175°C) oven for 42 to 47 minutes, or until the cake is a deep golden brown and a toothpick inserted into the center comes out with only a few moist crumbs attached.

Place the pans on a cooling rack and allow the cakes to cool completely before removing them from the pans. Once cooled, run a butter knife around the edges of each pan, turn out the cakes, and gently peel off the parchment paper.

Grain-Free and Vegan Vanilla Cake Layers on a Cooling Rack
