  • Natural Cane Sugar: Natural cane sugar lends a delicate color and flavor. However, feel free to substitute with regular granulated sugar or coconut sugar. (Keep in mind that coconut sugar will result in a darker tart with a hint of molasses flavor).
  • Tapioca Starch: Also sold as tapioca flour. If unavailable, arrowroot, potato starch, or cornstarch (if you consume corn) can be used as equal substitutes.
  • Baking Powder: Use fresh baking powder to ensure optimal rising and a light, airy texture. It’s critical to use baking powder, not baking soda, as they function differently.
  • Salt: Fine sea salt or regular table salt works equally well.
  • Vegan (Plant) Butter: Crucially, use stick-style vegan butter, rather than tubs or spreads. The latter contains significantly more water, which will compromise the final result.

Preheat your oven to 350°F (180°C). Lightly spray or grease the inside of a 9-inch (22.5 cm) tart pan. Ideally, choose one with a removable bottom for easy serving.

If you don’t have a tart pan, a 9-inch (22.5 cm) pie plate or pan works just as well. You can even use a square 9-inch baking pan.

Step 2: Combine the Ingredients in a Single Bowl

In a large mixing bowl, whisk together the almond flour, sugar, tapioca starch, baking powder, and salt until thoroughly combined. Add the melted vegan butter, non-dairy milk, vanilla extract, and almond extract. Whisk or stir until everything is fully incorporated. The batter will be quite thick.

    baking if the raspberries are getting too dark. Transfer to a cooling rack and cool completely.

Notes

Storage: Store the tart, in a covered cake or pie keeper at
cool room temperature for 1 day, or loosely covered in the refrigerator for up to 3 days.

Pan Options: If you do not have a tart pan with a removable
bottom, use a 9-inch (22.5 cm) pie plate/pan in its place, or a plain tart pan (without the removable bottom).
A square 9-inch (22.5 cm) baking pan will also work just fine.

Sugar Options: An equal amount of regular granulated sugar can
be used in place of the natural cane sugar. If you are fine with a darker-colored tart, you can also use an
equal amount of coconut sugar. For a sugar-free option, use an equivalent amount of granulated sugar-free
sweetener that is marked as suitable for baking.

Tapioca Options: I have only tested this with tapioca flour.
However, an equal amount of arrowroot starch, potato starch or corn starch should work fine as
substitutes.
