Amaranth, Almond & Pear Energy Balls {V+GF}

Ingredients
- 1 cup cooked, cooled amaranth (see note for directions)
- 1/2 cup almond butter
- 2 tablespoons maple syrup
- 1/3 cup finely chopped dried pears, or dried fruit of choice
- 1/4 cup roasted/toasted almonds, chopped
- 3 tablespoons coconut flour, more or less, as needed
Instructions
- In a medium bowl, stir together the amaranth, almond butter, and maple syrup until blended and smooth. If using unsalted almond butter, add a pinch of salt to taste. Stir in the finely chopped dried pears and chopped almonds.
- Gradually stir in the coconut flour, adding one tablespoon at a time. Continue mixing until the entire mixture forms a moderately stiff, cohesive dough that is not dry or crumbly. The dough should hold its shape when pressed.
- Once the dough reaches the desired consistency, shape and roll it into 1-inch balls. Place the finished energy balls into an airtight container for storage.
Notes
To make amaranth porridge: In a medium saucepan, over medium heat, toast 1/2 cup amaranth, stirring continuously, for 2 to 3 minutes or until it becomes fragrant. Add 1/4 teaspoon salt and 2-1/2 cups water; bring to a boil. Reduce heat to low, cover, and simmer, stirring occasionally, for 25 to 35 minutes or until the mixture is very smooth and creamy, and most (but not all) of the liquid has been absorbed. Allow it to cool completely before using. This process will yield approximately 2 cups of cooked amaranth; use half for this energy balls recipe.
Flavor boost options: For an enhanced flavor profile, consider adding 1/4 teaspoon of ground cardamom and/or 1/8 teaspoon of almond extract along with the maple syrup in step 1.
Storage: Store the finished energy balls in an airtight container in the refrigerator for up to 2 weeks, or in the freezer for up to 6 months. These convenient bites can also be transported at room temperature for approximately 8 hours, provided the ambient temperature is not excessively hot.
Higher Protein Option: For an extra protein boost, you can replace the coconut flour with an equal amount of your favorite plain or vanilla plant-based protein powder. This alteration can further enhance the nutritional benefits, making them even more ideal for post-workout recovery.
