Embrace the simplicity and deliciousness of summer with this unique bread. What began as a simple culinary experiment quickly blossomed into a recipe that captures the essence of the season. The inspiration for this loaf stemmed from a curiosity to explore if common tan-green lentils could replicate the success of red lentils in our beloved red lentil sandwich bread recipe. The outcome? An enthusiastic “yes!”
The initial tests with tan-green lentils yielded a bread with a subtle green hue. This sparked an exciting idea: why not amplify that natural tint and create a truly “super-green” bread? The answer was found in a generous blend of fresh, aromatic herbs. Cilantro, basil, parsley, and a hint of refreshing mint were combined with the savory notes of green onions and garlic, transforming the loaf into a vibrant green masterpiece. The result is not just visually stunning but also incredibly flavorful – a delicious symphony of garden-fresh goodness in every slice.

Crafting Your Own Super-Green Loaf: How to Make Fresh Herb Lentil Bread
One of the most appealing aspects of this lentil bread, besides its incredible flavor and health benefits, is its straightforward preparation. You don’t need to be an experienced baker to achieve perfect results. The process is remarkably simple, breaking down into just a few easy steps:
First, the journey begins with soaking your common tan-green lentils. This crucial step softens the lentils, making them easier to blend into a smooth batter and improving their digestibility. Allow them to soak for several hours, or even overnight, until they’ve absorbed most of the liquid and plumped up beautifully.
Next, gather your remaining ingredients – the vibrant fresh herbs, the specific amount of water for blending, coconut flour, baking powder, and a touch of fine sea salt. These ingredients are then combined with your soaked, drained lentils in a high-speed blender. The key here is to blend until the mixture is completely smooth, ensuring there are no tiny bumps or gritty textures. This smoothness is what contributes to the bread’s tender crumb. A quick scrape down of the blender sides once or twice during the process ensures everything is incorporated perfectly.
Once your batter is silky smooth, simply spread it evenly into a prepared 9-inch square pan. Then, it’s off to the oven, where the magic happens!
As your fragrant bread emerges from the oven, you might experience a fleeting moment of surprise or even slight disappointment. The surface, exposed to the heat, will no longer be the bright, vivid green of the raw batter. This is completely normal and expected, as the heat causes a slight browning and dulling of the exterior color.
However, any initial disappointment will instantly vanish the moment you slice into the loaf. Prepare to be delighted, because the interior reveals its true glory: a beautifully moist, super-green crumb, promising all the fresh herb flavor you anticipated. The contrast between the subtle exterior and the vibrant interior is part of this bread’s charm, making every slice a pleasant surprise.
The Heart of the Flavor: Abundant Fresh Herbs and Their Versatility
The remarkable flavor profile of this lentil bread largely comes from its generous inclusion of fresh herbs. The recipe calls for a substantial 1½ packed cups of fresh herbs, and this is where you can truly let your culinary creativity shine. The combination I used—roughly ½ cup each of fresh parsley, cilantro, and basil, with a few refreshing mint leaves from the garden—creates a balanced, aromatic, and distinctly summery taste. However, feel free to experiment and tailor the herb blend to your personal preferences and what’s available fresh.
You can adjust the proportions of cilantro, parsley, and basil to highlight your favorite flavors. Love cilantro? Add a bit more! Prefer a stronger basil note? Increase its quantity. Just be mindful with certain potent herbs. While a touch of mint adds a wonderful freshness, using it as the sole herb, or in very large quantities, might result in a flavor that’s a bit too intense or unusual for a savory bread. Think of mint as a complementary accent rather than the main star.
Consider other fresh herbs too! A small amount of fresh dill could add a lovely tangy note, or chives could provide a mild oniony flavor. The key is to use fresh herbs; dried herbs will not provide the same vibrant color or intense fresh flavor, nor will they contribute to the texture in the same way. This flexibility ensures that every batch of Fresh Herb Lentil Bread can be uniquely yours, making it a recipe you’ll revisit time and again throughout the warmer months. Happy baking, and enjoy the delightful aromas filling your kitchen!

Ingredients
- Water, for soaking
- 1 cup uncooked common lentils, tan-green, rinsed and drained
- 1½ cups water, for blending
- 1½ cups, packed fresh herbs (combination of cilantro, parsley, mint and/or basil)
- ¼ cup coconut flour
- 1 tablespoon baking powder
- ¼ teaspoon fine sea salt
Instructions
- Place the rinsed lentils in a medium bowl or other container; loosely cover. Cover with enough water to cover by 1 inch (2.5 cm). Let stand, at cool room temperature, for at least 3 hours or up to 24 hours (much of the water will be absorbed).
- Preheat oven to 350F (180C). Line a 9-inch (22.5 cm) baking pan with parchment paper; spray or grease exposed sides.
- Drain the lentils, discarding soaking water.
- Place the drained soaked lentils, 1½ cups water, and herbs in a high-speed blender. Blend on HIGH speed until completely smooth (no tiny bumps), stopping once or twice to scrape down the sides of the container.
- Add the remaining ingredients to the blender; blend until combined, stopping to scrape down once or twice. Spoon and spread into the prepared pan, smoothing the top.
- Bake in the preheated oven for 25 to 30 minutes or until the bread is risen, appears dry on the surface, and a toothpick inserted near the center of the bread comes out clean.
- Cool bread in the pan on a wire rack for 10 minutes. Use the parchment to remove bread from the pan and cool completely, or serve warm. Cut into 16 squares.
