Agar agar powder dissolves almost instantly, ensuring a smooth and consistent tofu texture, whereas flakes can take several minutes to dissolve properly and may not always fully integrate. You can typically find agar agar powder in health food stores or readily order it online from various vendors. If, however, you absolutely must use flakes, a general conversion guideline is to use 1 tablespoon of flakes for every 1 teaspoon of powder specified in the recipe. But for best results, stick to the powder!
