Fudgy Date Brownies (Vegan, Gluten-Free, Oil-Free)

Rich, fudgy date brownies get their sweetness and soft texture from dates. Made in a mini muffin tin with five main ingredients, they are vegan, gluten-free, grain-free, and oil-free, with a deep chocolate flavor and a hint of caramel.

Introduction

Sooner or later, even in the middle of summer fruit season, I want chocolate. I grew up spoiled for choice—fruit from our backyard trees and berries, melons, peaches, and apricots from Monterey Market in Berkeley—but a rich chocolate brownie still has its place.

These little brownies answer that craving with dates. The dates bring plenty of sweetness, a subtle caramel flavor, and the moisture that makes the centers wonderfully fudgy. A quick soak softens them before they go into the food processor with almond butter, cocoa, and a small amount of flaxseed meal. There is no flour in the batter.

I bake the brownies in mini muffin cups, which makes them straightforward to portion and gives each one a tender middle. The key is to take them out when the tops are just firm to the touch, then let them cool before peeling away the liners.

ingredients for date brownies
  • Pitted dates:Any variety, including Noor or Medjool, works. Soaking in very hot water softens the dates for a smooth batter; keep all of the soaking water.
  • Boiling water:Softens the dates and becomes part of the batter.
  • Almond butter:Adds richness and helps give the brownies their fudgy texture. Use a smooth variety; other creamy nut and seed butters are covered below.
  • Unsweetened cocoa powder:Gives the brownies their deep chocolate flavor. Raw cacao powder is another option.
  • Flaxseed meal:Works as a binder in the flourless batter. Ground chia seeds can replace it in an equal amount.
  • Baking powder:Gives the little brownies a gentle lift. Use certified gluten-free baking powder if needed; do not substitute baking soda.
  • Salt and vanilla, optional:Salt (table salt or sea salt) brings out the chocolate flavor, while vanilla (either vanilla extract or vanilla bean paste) rounds it out.

Taste and Texture

Most importantly, these taste like real brownies, not ersatz “nourishing brownies.” The first bite is deeply chocolatey, followed by the natural sweetness caramel note of the dates. The centers are soft and dense, with the moist, fudgy, chewy texture you want in traditional brownies. Because they are small, the difference between fudgy and dry happens quickly in the oven. Pull them out as soon as the tops feel just firm.

Storage

  • Refrigerator:Store in an airtight sealed container in the fridge for up to 1 week.
  • Freezer:Freeze the cooled brownies in an airtight container for up to 6 months. Thaw before serving.

Serving Suggestions

You do not need aa special occasion to eat these brownies since they are at once indulgent dessert-worthy and nourishing! Enjoy one for a treat, nibble one or two during an afternoon coffee break, pack into lunches and snack bags, or add to a morning breakfast or fruit and non-dairy yogurt. They look beautiful on a dessert platter, too.

Flavor Variations

Coffee chocolate

Add 1 teaspoon instant espresso powder or 1 tablespoon instant coffee powder to the batter.

Warm spices

Add 1/8 to 3/4 teaspoon cinnamon, nutmeg, cardamom, allspice, ginger, or pumpkin pie spice. For a combination, use no more than 3/4 teaspoon total.

Chocolate or crunchy add-ins

Add up to 1/3 cup dark chocolate chips, chocolate chunks, chopped nuts (e.g., pecans, walnuts, almonds), or seeds; alternatively, add 2 to 3 tablespoons cacao nibs. Choose add-ins that suit your dietary needs. You can also add these to the tops of the brownies before baking.

Fruit and coconut

Add up to 1/3 cup chopped dried fruit or unsweetened shredded or flaked coconut. Or gently press a fresh raspberry into the top of each filled cup before baking.

Orange or extract

Add 1 to 2 teaspoons finely grated orange zest, or 1/4 to 1/2 teaspoon almond, rum, or coconut extract. Vanilla is another option in the recipe card.

Tips for Success

For the fudgiest brownies
  • Soak the dates for at least 30 minutes and blend them with all of their soaking water until smooth.
  • Use a small cookie scoop to fill the mini muffin cups evenly.
  • Check the brownies at 10 minutes. Remove them when the tops are just firm; overbaking dries them out.
  • Let them rest in the pan for 10 minutes, then cool completely on a rack. Silicone liners give the easiest release.

Ingredient Substitutions

Swap the almond butter
  • Use an equal amount of another creamy nut or seed butter, such as cashew butter, peanut butter, sunflower seed butter, pumpkin seed butter, or tahini. The flavor will change with your choice.
  • Coconut butter can also replace the almond butter in an equal amount. Coconut oil is not a substitute.
Swap the flaxseed meal
  • Use an equal amount of ground chia seeds (chia meal) in place of the flaxseed meal in this date brownie recipe.
Swap the cocoa
  • Raw cacao powder can replace the unsweetened cocoa powder.

Frequently Asked Questions

Can I make date brownies without a mini muffin tin?

I have not tested this batter in a baking pan, so I cannot give you a reliable baking time. If you would like to experiment, I would try a parchment-lined 9-by-5-inch loaf pan and begin checking around 25 minutes. A reader reported success portioning the batter with a cookie scoop and baking it on a parchment-lined sheet; that method has not been part of my testing.

Can I use date paste instead of whole dates?

By weight, use the same amount of date paste as the pitted dates. I have not established how much soaking water, if any, to use with date paste, so I cannot promise the same batter or baking result without testing that change.

Is there flour in these brownies?

No. The batter contains a small amount of flaxseed meal for binding, but no grain or other flour.

Can I use a blender in place of a food processor?

Most likely, yes. A smaller blender or bullet blender, on medium-high speed, will likely work reliable to make the batter.

Can I make these in a square pan instead of muffin tin?

Most likely yes. I recommend an 8-inch size square pan, as opposed to a 9-inch brownie pan, for this amount of batter. Line the pan with a piece of parchment paper, spread the batter in an even layer, and then bake for at least 5 minutes longer. Cool completely, then slice into squares.
