Introduction

Today’s post is more solution than recipe. But it is one that works so well for me, I decided I had to share.

The problem?Sometimes I need a serious hunger buster.

I need a hunger buster for all kinds of situations. For example:

  • It is a regular day, yet despite eating a hearty breakfast, or lunch, and/or snacks, I’m hungry again soon after.
  • I’m traveling, stuck in a meeting, or trying to stay focused on a project, and do not have the time or ability to search for snacks.
  • I need a snack that will both nourish and fill me up, to keep me on track with my goals.

Do any or all of these sound familiar? If so, you might want to try my 3-Ingredient Coconut Flour Hunger Buster.

It is almost too plain to call a recipe: stir coconut flour into Greek-style yogurt with a splash of milk, then give it a few minutes to thicken. The result is a generous, spoonable bowl that works for a snack, a small breakfast, or a lightly sweet treat. No elaborate prep, and very little washing up. I can get behind that.

If you are looking for coconut flour recipes that use just a small amount of the bag, this is a handy one to keep in mind. Coconut flour absorbs a remarkable amount of liquid, turning an ordinary serving of yogurt into something much thicker. A little extra milk lets you make it as soft or firm as you like.

One of my go-to combinations is vanilla yogurt with a tiny drop of almond extract. It reminds me of an Almond Joy filling. A few summer berries are lovely, too. Start with the plain bowl below, then make it your own.

Why You’ll Love This Recipe

  • Only 3 ingredients:A small amount of coconut flour transforms a familiar yogurt snack.
  • Quick to prepare:About a minute of stirring, followed by a short rest to thicken.
  • Vegan, egg-free, and dairy-free:Use plant-based yogurt and nondairy milk for the vegan version. It is also Paleo-friendly when made without dairy.
  • Gluten-free and grain-free options:Coconut flour is naturally free of gluten and grains; choose yogurt, milk, and toppings that meet your needs.
  • No added oil:The recipe needs no oil. Choose oil-free yogurt and milk if you need the finished bowl to be oil-free, too.
  • Straightforward to personalize:Adjust the thickness, sweetness, and toppings to suit your appetite.
  • Make-ahead friendly:Mix a serving in advance and keep it covered in the refrigerator.
  • A especially-straightforward way to use coconut flour. You do not have to cook or bake coconut flour pancakes, muffins, or bread with multiple eggs, as many coconut flour recipes require. Simply whisk wet ingredients with coconut flour, without cooking.

  • Yogurt:Plant-based Greek-style yogurt makes an especially thick bowl, but regular nondairy yogurt works, too. Choose a flavor you enjoy. Sweetened yogurt keeps the base recipe plain; plain yogurt lets you control the sweetness. Dairy yogurt is also an option if you do not need the recipe to be vegan.
  • Nondairy milk:Loosens the yogurt and provides moisture for the coconut flour to absorb. Use your preferred variety, adding more as needed. Dairy milk also works for a nonvegan version.
  • Coconut flour:Gives the bowl its gentle coconut flavor and thick texture. Use finely milled coconut flour that the manufacturer confirms is suitable for uncooked use; do not use flour labeled as requiring cooking or baking. Shredded coconut is not a substitute.

Note that the complete instructions are also in the recipe card below.

  1. Stir together.Combine the yogurt, nondairy milk, and coconut flour in a bowl. Stir until evenly blended, breaking up any flour lumps.
  2. Let it thicken.Let the mixture stand for at least 3 minutes. The coconut flour will absorb moisture and the mixture will become thicker.

Taste and Texture

Expect a thick, creamy yogurt bowl with a gentle coconut flavor and sweetness that depends on your yogurt. It has more body than yogurt alone; one reader aptly compared the texture to ricotta. With Greek-style yogurt or an overnight rest, it can become firm enough to hold a spoon upright. Prefer a softer, pudding-like bowl? Stir in a little more milk.

Storage

  • Refrigerator:Store in a tightly covered container for up to 2 days. You can make it ahead and refrigerate until ready to serve.
  • Before serving:Stir well and add more milk if it has become thicker than you like.

Serving Suggestions

  • Plain and plain:Enjoy a bowl on its own for a plain snack or small breakfast.
  • Fresh fruit or dried fruit:For a sweeter finish, spoon fresh berries (e.g., raspberries, blueberries, sliced strawberries) or frozen thawed berries, diced fruit, or chopped dried fruit over the top.
  • Nuts or seeds:Add a bit of crunch, plus extra fiber and protein, with a sprinkled topping of chopped raw or toasted nuts (e.g., pecans, walnuts, almonds) or seeds (e.g., sunflower seeds, green pumpkin seeds, hemp hearts).

Flavor Variations

Chocolate Almond

Use vanilla yogurt and stir in a tiny drop of almond extract. Shave or grate a bit of dark chocolate over the top, or sprinkle with a teaspoon of miniature dark chocolate chips. This is one of my go-to combinations, it reminds me of an Almond Joy candy bars. You can also add a few sliced toasted almond for crunch.

Summer Berries

Top the yogurt mixture with fresh berries, or thawed, frozen mixed berries when berries are out of season.

Lemon or Lime Pie

Being with vanilla yogurt, replace 1 or 2 tablespoon of the milk with freshly squeezed lemon juice or lime juice and stir in a teaspoon of finely grated lemon zest or lime zest. Top with a few toasted nuts or seeds, a few graham cracker crumbles, or granola.

Tips for Success

A Few Plain Tips
  • Use a bowl.I suggest transferring the yogurt to a bowl before mixing. Stirring everything in the little yogurt container is an invitation to a mess.
  • Give it a few minutes.Wait at least 3 minutes before deciding whether to add more coconut flour; the mixture continues to thicken as it stands.
  • Add moisture when needed. If the mixture feels dry or gritty, stir in more milk or a little water and let it stand again so the flour can absorb the liquid. It will look like a batter when first mixed, then thicken within seconds.
  • Sweeten to suit your yogurt.Taste before adding sweetener, especially if you started with a flavored or sweetened yogurt.

Ingredient Substitutions

Yogurt, Milk, and Sweetener Options
  • Yogurt:Use Greek-style or regular plant-based yogurt. Almond, coconut, and oat varieties are options; choose a grain-free variety if needed. Dairy yogurt works if you are not vegan. Thinner yogurt may need less additional milk.
  • Milk:Use the nondairy milk you prefer, or dairy milk if you are not vegan. I suggest a little extra milk or water if the mixture needs more moisture.
  • Sweetener:With plain yogurt, add your preferred sweetener to taste. For a keto option, choose plain Greek yogurt, milk, and a sweetener that fit your carbohydrate needs; the finished nutrition depends on your selections.
  • Coconut flour:I do not suggest replacing it with another flour. Its absorbency is what makes the recipe work, so another flour would need a different formula.

Frequently Asked Questions

Why is my coconut flour hunger buster gritty?

The coconut flour may need more moisture. I suggest stirring in additional milk or a little water, then letting the mixture stand again. Break up any remaining flour lumps as you stir.

Do I need Greek-style yogurt?

No. Regular yogurt works, too. Greek-style yogurt produces an especially thick mixture; adjust the milk to get the consistency you enjoy.

Can I double the recipe?

Yes. Double the ingredients and divide between two bowls or covered containers. Adjust the milk after the mixture has had time to thicken.

Can this be a nourishing snack?

Yes! It is made with whole food ingredients and can be a good source of nourishing carbs and protein, depending on the particular yogurt chosen.
