Well, I’ve done the math, and it turns out that I can get everything accomplished on my to-do list before Christmas so long as I send a few items to the cutting floor. Like sleeping and showering.

Hmm, perhaps it’s time to revisitnew math…

Either way, I need to make sure I have plenty of yummy food on hand for quick energy boosts in the coming days and weeks. I have the very thing I need, and that I am guessing YOU need, too, for powering through the busiest days: almond butter stuffed dates!

You may be thinking the following: almond butter? Dates? Big deal! But trust me, the sum is far greater than the parts. They taste like candy, but the sugar rush is replaced with a power rush.

Recipe Benefits

  • Only 2 ingredients (The sum is so much greater than the parts (tastes like candy!)
  • About 2 minutes to make
  • Vegan (egg-free, dairy-free)
  • Gluten-free
  • Grain-free
  • Nourishing (3 grams protein & 3 grams fiber per stuffed date)
  • Variable (change out the nut butter, add some toppings)

Ingredients

The exact amounts of each ingredient are indicated in the recipe card at the end of the post.Toggle betweenUS Customary(volume) andMetric(weights) for preferred measurement option.

  • whole pitted dates (preferably gooey-soft, unctuous ones, like Medjool).
  • almond butter (or other nut or seed butter, like peanut butter, cashew butter, sunflower seed butter or pumpkin seed butter)

You can add a sprinkle of chopped toppings, if you like. For example:

  • flaky sea salt
  • finely chopped chocolate
  • finely chopped cacao nibs
  • finely chopped nuts (e.g., almonds, pistachios, walnuts, pecans)
  • finely chopped dried fruit (e.g., dried cherries, dried cranberries or dried blueberries)

Step by Step Instructions

Note that the complete instructions are also in the recipe card below.

  • Using the tip of a sharp knife, slit each of the dates lengthwise
  • Use your fingers to open out each date (creating a pocket for the almond butter).
  • Spoon 1.5 teaspoons of almond butter inside each date.
  • Gently press the sides of the filled dates together (some of the almond butter will still show). If desired, sprinkle with one of the suggested toppings (see below)
  • The dates can be eaten immediately, but are reliable if allowed to chill for at least 1 hour (this allows the almond butter to firm up).

How to Serve the Stuffed Dates

These handheld treats are reliable for:

  • quick snacks
  • pre- or post-workout fuel
  • impromptu desserts
  • mezze trays and festive dessert trays
  • gift-giving

Satisfying immediately, the stuffed dates are even better if you chill them (in an airtight container) for at least one to two hours until the nut butter is firm (the beauty of natural nut and seeds butters is they firm up when cold).

Make! Eat! Enjoy! These give “save the date” satisfying new meaning.
