Even if the calendar still hints at colder days, the promise of warm weather inevitably brings cravings for classic summer dishes. While traditional grilling season might still be weeks away, who says you can’t enjoy a fantastic burger right now? As an enthusiastic cook always eager for a good meal, I decided to usher in those sunny vibes with a batch of burgers – but not just any burgers.

These aren’t merely “good” meatless burgers; they are, without exaggeration, the best I’ve ever tasted. Their exquisite flavor profile and perfectly balanced texture make them stand out. And as you can see, their striking crimson hue makes them truly gorgeous, adding an aesthetic appeal that’s often missing in plant-based alternatives.

Why Beets are the Ultimate Ingredient for Vegan Burgers

Beets are the undisputed stars of these burgers, contributing not only their captivating color but also a remarkable depth of flavor. For years, I remembered a memorable meatless burger with beets, yet somehow, they hadn’t found their way into my own recipes until now. Recent glimpses of stunning beet burger photos rekindled that memory, inspiring me to finally craft my own version.

With an abundance of beets recently purchased for another recipe and a gentle nudge from my husband about their refrigerator dominance, the timing felt serendipitous. Beets offer a naturally sweet and earthy undertone that complements savory spices beautifully. Beyond their taste, they bring a powerhouse of nutrients to the table, making these burgers as healthy as they are delicious. When combined with other carefully selected ingredients, beets transform into a surprisingly “meaty” base, defying expectations and elevating the plant-based burger experience.

Step-by-Step Guide to Making Your Beet Burgers

Prepping Your Root Vegetables: Beets and Mushrooms

The journey to these exceptional beet burgers begins with careful preparation of the core vegetables. I typically start with about a pound of fresh beets, which usually translates to three medium-large specimens. After a thorough scrub and trimming the ends, each beet is individually wrapped in foil to capture moisture and flavor during roasting. They then go into a preheated 375°F (190°C) oven, a method that coaxes out their natural sweetness and softens them to perfection, making them easy to process later.

Mushrooms are another vital component, lending an incredible umami depth that is characteristic of savory, meat-like flavors in plant-based dishes. While sautéing is a common method for mushrooms, I opt for a hands-off approach to simplify the process. Quartered mushrooms are spread onto a parchment-lined baking sheet and lightly misted with cooking spray. This prepares them for their shared oven time with the beets.

Efficiency is key in my kitchen, which is why I love the simultaneous roasting technique. After the beets have had a 35-minute head start, the mushrooms join them in the oven. Just 10 more minutes is all it takes for both vegetables to reach their ideal tenderness. This not only saves time but also minimizes cleanup, leaving you with just one pan to wash. Once roasted, both the beets and mushrooms need to cool completely – a crucial step for achieving the right patty consistency, so some advanced planning is beneficial.

Time-Saving Tips: Shortcut Methods for Busy Cooks

While roasting from scratch yields the best flavor, I understand that time isn’t always on your side. If you’re looking to significantly reduce prep time, there’s a convenient shortcut. Instead of roasting fresh beets, you can opt for 1-1/2 (15-ounce) cans of whole baby beets (ensure they are not pickled and are thoroughly drained) or two packages of ready-roasted beets, often found in the produce section of your grocery store. For the mushrooms, a quick sauté in a large skillet with two teaspoons of oil for 6 to 7 minutes until softened and nicely browned will do the trick. Just make sure to cool them completely before proceeding with the rest of the recipe. These alternatives allow you to enjoy these incredible burgers even on your busiest days.

Assembling the Heart of the Burger: Beyond the Beets

Once your roasted vegetables have cooled, the assembly process is wonderfully straightforward. The beets, once peeled and roughly chopped, and the roasted mushrooms go into a food processor. They are pulsed until finely chopped, careful not to over-process into a puree. Next, a can of rinsed and drained black beans is added, pulsed just enough to break them down roughly, again avoiding a smooth paste. These beans are essential, providing not only protein and fiber but also a natural cohesiveness to the mixture.

Transfer this vibrant blend to a large bowl. If there are any larger pieces, a quick mash with a fork will ensure a uniform texture. While the beans contribute some binding power, a truly burger-like, “meaty” consistency requires a special binder. For a long time, I experimented, observing other recipes using quinoa, oats, or brown rice. However, I was determined to find a binder that would create a more unified, cohesive texture and, crucially, keep the burgers entirely grain-free.

The Game-Changer: Coconut Flour for Superior Texture

After much deliberation and testing, the answer became clear: Coconut Flour.

The addition of coconut flour to these beet burgers has truly been a game-changer! Its unique properties go far beyond simple binding. When combined with the moistness of the beets, beans, and mushrooms, it miraculously creates a firm, yet remarkably light and “meaty” texture. Say goodbye to dense, leaden veggie burgers that feel heavy on the stomach! This is the exact texture I’ve been striving for in a meatless burger for ages, and I’m already envisioning its potential in many future recipes.

For those who might be hesitant, let me assure you: there is absolutely no discernible coconut flavor from the coconut flour in these burgers. We infuse the mixture with a robust blend of smoky spices – smoked paprika, earthy cumin, and aromatic garlic powder – along with a touch of salt and pepper. These strong, savory flavors expertly mask any hint of coconut, resulting in a perfectly balanced, deeply savory, and “vegilicious” patty. The final product is a smoky, savory, and satisfying burger where no single ingredient dominates, allowing the entire symphony of flavors to shine.

The water component is added first, allowing the mixture to hydrate evenly, followed by the coconut flour. A brief resting period of 10 minutes gives the coconut flour time to absorb the liquids and work its magic, transforming the mixture into a firm, workable consistency perfect for forming into patties. If your mixture feels a little too soft, simply add a teaspoon more of coconut flour at a time until it reaches the desired firmness. This precise binding ensures your burgers hold their shape beautifully during cooking, resulting in a perfect patty every time.

More Than Just Delicious: A Nutritional Boost

Beyond their exceptional flavor and inviting appearance, these Vegan Grain-Free Beet Burgers are a nutritional powerhouse. Each patty is bursting with beneficial compounds, making them a fantastic choice for your health. Beets are renowned for their high antioxidant content, helping to combat oxidative stress in the body. The combination of black beans and mushrooms provides a significant protein boost, with nearly 8 grams per patty, contributing to muscle health and satiety.

Furthermore, these burgers are an excellent source of dietary fiber, crucial for digestive health and maintaining stable blood sugar levels. You’ll also find remarkably high amounts of potassium, over 600 mg per patty, supporting heart health and electrolyte balance. All this goodness comes in a surprisingly low-calorie package, with each patty tallying up to a mere 119 calories. This low-calorie count offers plenty of freedom to load up on your favorite toppings without guilt!

Serving Your Perfect Beet Burger

The versatility of these beet burgers makes them a joy to serve. Their inherent deliciousness means they pair wonderfully with an array of accompaniments. Imagine them nestled in a soft, gluten-free bun, or for an even lighter option, wrapped in crisp lettuce leaves. The low-calorie nature of the patties leaves ample room for indulgent toppings. Pile them high with creamy mashed avocado or homemade guacamole, a dollop of rich hummus, or a generous drizzle of tangy barbecue sauce. Fresh sliced tomatoes, crisp lettuce, red onion, and pickles are classic additions that always enhance the burger experience. Don’t hesitate to get creative with your favorite vegan cheeses or a spicy sriracha mayo. For a complete meal, serve alongside crispy sweet potato fries, a vibrant green salad, or a refreshing coleslaw. These burgers are truly a canvas for your culinary imagination!

Prep Ahead for Easy Meals

One of the many conveniences of these beet burgers is their excellent make-ahead potential. Whether you’re planning for a busy week or preparing for a gathering, you can easily form the patties in advance. Uncooked patties can be individually wrapped in parchment or wax paper and stored in an airtight container in the refrigerator for up to 3 days. For longer storage, they freeze beautifully for up to 6 months, allowing you to have a healthy, homemade meal option ready whenever hunger strikes. When you’re ready to enjoy them, simply follow the baking instructions to achieve a perfectly cooked, slightly crispy patty.

Ingredients

  • 1 pound trimmed, scrubbed beets (about 3 medium-large)
  • 8 ounces white mushrooms, quartered
  • 1 (15-ounce) can black beans, rinsed and drained
  • 2 teaspoons smoked paprika
  • 1-1/2 teaspoons ground cumin
  • 1-1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup water
  • 1/4 cup coconut flour

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Tightly wrap beets in foil and place on one side of a large rimmed baking sheet. Bake for 35 minutes.
  3. Meanwhile, place mushrooms on a piece of parchment paper (roughly half the size of the baking sheet). Lightly spray with cooking spray and sprinkle with salt.
  4. Open oven and place parchment with mushrooms on the other side of the sheet. Bake for 10 minutes longer. Remove from oven and let mushrooms and beets cool completely.
  5. Peel the cooled beets and roughly cut into medium pieces. Place beets and mushrooms in a large food processor; pulse until finely chopped (but not a puree). Add the beans, paprika, cumin, garlic powder, salt, and pepper; pulse until beans are roughly chopped (but not a puree). Transfer mixture to a large bowl.
  6. Stir in the water until blended, and then stir in the coconut flour. Let stand for 10 minutes. The burger mixture should be stiff enough to form into patties (if not, add more coconut flour, a teaspoon at a time).
  7. Using a heaping 1/2-cup for each, form the mixture into 6 equal patties, about 3/4-inch thick. Store the patties, or cook.
  8. Baking the patties: Preheat the oven to 400°F (200°C). Spray a large baking sheet with cooking spray. Place patties on sheet, spacing evenly. Spray patties with cooking spray.
  9. Bake in the preheated oven for 25 to 30 minutes, until heated through and slightly crispy at the edges.
  10. Serve with any and all of your favorite accompaniments.

Notes

Storage: Store the burgers, individually wrapped in parchment or wax paper, in an airtight container in the refrigerator for 3 days or the freezer for up to 6 months.

Shortcut version: Omit the roasting of the beets & mushrooms. Instead, use 1-1/2 (15-ounce) cans of whole baby beets (NOT pickled), drained, or 2 packages of ready-roasted beets (in the produce department). Sauté the mushrooms in a large skillet, in 2 teaspoons of oil, for 6 to 7 minutes until softened and browned. Cool mushrooms completely. Proceed as directed in the recipe.

Smoked Paprika Sub: An equal amount of chili powder can be used in place of the smoked paprika.
