Vegan Chocolate Pecan Protein Bars (GF, Oil-Free)
No-bake vegan chocolate pecan protein bars! They taste like dessert but are packed with protein, & they are both oil-free & gluten-free.
Ingredients
Bottom Layer
- 1/3 cup packed pitted dates, (soaked in warm water 20 minutes, drained)
- 1/4 cup almond butter, (or nut butter/seed butter of choice)
- 1/3 cup rolled oats, (old-fashioned or quick-cooking)
- 1/4 cup toasted pecan halves
- 2/3 cup vegan vanilla protein powder
- 1/4 cup plain nondairy milk, (e.g., oat milk, soy milk, cashew milk, almond milk)
Chocolate Layer
- 1/3 cup dark chocolate chips, (certified gluten-free, and vegan, as needed)
- 2 tablespoons almond butter, or nut/seed butter of choice
- 1 tablespoon nondairy milk, (e.g., oat milk, soy milk, cashew milk, almond milk)
- 1/2 cup pecans, very coarsely chopped (for topping, optional)
Instructions

Bottom Layer Preparation:
Grease or spray 8 cups of two standard size, 12-count muffin tins. -
In a food processor, combine the dates, almond butter, oats, and pecans. Process until all ingredients are very well blended and start to form a sticky mixture. Add the protein powder and non-dairy milk; continue to process until a thick, cohesive, and sticky dough forms. If the mixture is too dry, add a tiny bit more milk, one teaspoon at a time, until it comes together.

Divide this dough mixture evenly between the 8 prepared muffin cups. Using your fingers or the back of a spoon, firmly tamp down and smooth the tops of each portion. Place the muffin tin in the refrigerator while you prepare the chocolate layer.

Chocolate Layer Preparation:
In a microwave-safe bowl, combine the dark chocolate chips, the remaining 2 tablespoons of almond butter, and 1 tablespoon (15 mL) of non-dairy milk. Microwave in 15 to 30-second intervals, stirring well after each interval, until the mixture is completely melted and smooth. Divide this melted chocolate mixture evenly on top of the chilled bottom layers in each muffin cup, carefully smoothing the tops. If desired, sprinkle the very coarsely chopped pecans over the chocolate layer and gently press them down to adhere. -
Return the muffin cups to the refrigerator and chill for at least 2 hours, or until the bars are very firmly set. Once firm, run a thin knife around the edge of each bar to gently loosen and remove them from the muffin cups.

Storage: Store these delightful bars in an airtight container. They will keep well at room temperature for up to 4 days (provided it’s not too hot), in the refrigerator for up to 2 weeks, or in the freezer for up to 3 months for longer freshness.
