Experience a modern twist on a beloved Welsh classic: this Vegan Gluten-Free Welsh Fruit Bread (Bara Brith) offers all the traditional flavors, reimagined with a nutritious blend of almond flour and chickpea flour.

Introducing the Ultimate Vegan Gluten-Free Welsh Fruit Bread (Bara Brith)
Allow me to introduce you to one of my all-time favorite quick breads: Bara Brith. This traditional Welsh fruit loaf is more than just a baked good; it’s a comforting slice of history, steeped in rich flavors and cultural heritage. The name “Bara Brith” literally translates to “speckled bread,” a perfectly apt description for every slice, which is generously dotted with a vibrant assortment of tea-soaked dried fruits.
Much like the beloved chocolate chip cookie here in the U.S., recipes for Bara Brith are incredibly diverse, passed down through generations with each family adding their own unique touch. However, two elements consistently define this iconic bread: an abundance of dried fruit, lovingly steeped in robust black tea, and a warm, aromatic blend of spices.
A Wholesome Makeover: My Unique Bara Brith
As someone with Welsh roots, I feel a special connection to this recipe, which has inspired me to create a contemporary variation that caters to modern dietary needs without sacrificing an ounce of its authentic charm. My unique contribution to the world of Bara Brith is a completely vegan, grain-free, and gluten-free version, thoughtfully crafted with a blend of nutrient-rich almond flour and wholesome chickpea flour. This innovative approach ensures that everyone can enjoy the comforting taste of this Welsh staple.

- Orange Zest: An optional but highly recommended addition, lending a bright, aromatic citrus note that beautifully complements the spices and fruit.
- Mixed Chopped Dried Fruit: A versatile selection of fruits such as apricots, raisins, cherries, and dates, which are rehydrated and infused with tea flavor.
- Chickpea Flour (Sifted if Lumpy): A key gluten-free and grain-free flour that adds a tender crumb, a slightly savory undertone, and a boost of protein and fiber.
- Blanched Almond Flour: Contributes to the bread’s moistness, rich flavor, and fine texture, while also being grain-free and gluten-free.
- Coconut Sugar or Brown Sugar: Provides natural sweetness with a subtle caramel note.
- Baking Powder (Grain-Free, as Needed): Essential for leavening, ensuring the bread rises beautifully and achieves a light texture.
- Baking Soda: Works in conjunction with the acidic ingredients (like lemon juice) to provide additional lift and tenderness.
- Sweet Spices (Cinnamon, Ginger, Nutmeg, Cardamom): A harmonious blend of warming spices that defines the comforting aroma and taste of Bara Brith.
- Vegan (Plant-Based) Butter (or Vegetable Oil): Adds richness and moisture to the bread.
- Lemon Juice or Vinegar: An acidic component crucial for activating the baking soda, aiding in leavening and contributing to a tender crumb.
Choosing the Perfect Dried Fruit Blend for Your Bara Brith
The beauty of Bara Brith lies in its flexibility, particularly when it comes to the dried fruit selection. For my batch, I opted for a delightful combination readily available in my pantry: roughly equal portions of sweet raisins, chewy dates, tangy apricots, and bright cranberries. This mix offers a wonderful balance of textures and flavors. While you can certainly follow my lead, feel free to use any medley of dried fruits that appeals to you. The key is to aim for a blend of at least two different fruits to achieve that characteristic “speckled” appearance and varied taste profile.
The Art of Spice Blending
Some traditional Bara Brith recipes call for an intense explosion of spices, while others prefer a more subtle hint. I find my preference lies in the middle ground – a balanced blend that offers warmth without overwhelming the delicate fruit flavors. You have the option to use a convenient pre-made spice blend like pumpkin pie spice or apple pie spice, which typically contain a good base of cinnamon, nutmeg, and cloves. However, for this recipe, I crafted my own bespoke blend, emphasizing the comforting notes of cinnamon and ginger, the unique floral warmth of cardamom (which I’m utterly obsessed with!), and a touch of classic nutmeg. This custom blend truly elevates the bread’s aromatic profile.
The Zest of Orange: An Essential Flavor Enhancer
While orange zest is often listed as optional in many recipes, I consider it a vital component for my Bara Brith. It introduces a bright, fresh citrus note that cuts through the richness of the fruit and spices, adding an extra layer of complexity. My method involves finely chopping the orange zest and allowing it to soak along with the tea and dried fruit. The boiling water works its magic, releasing the essential oils from the zest and infusing the fruits with a subtle, yet distinct, orange essence. This step contributes significantly to the bread’s overall delightful aroma and taste.

Step-by-Step Guide to Baking Perfect Vegan Gluten-Free Welsh Fruit Bread
Please find the complete, detailed instructions conveniently laid out in the recipe card at the bottom of this page.
- Prepare the Fruit Soak: Begin by combining boiling water, tea bags, and the finely chopped orange zest in a large bowl. Allow it to brew for 5 minutes, ensuring the tea is strong and the zest releases its oils. After brewing, remove the tea bags and zest. Immediately add your chosen dried fruit mix to the warm tea and let it soak. This can be for a minimum of 30 minutes, or ideally, up to overnight in the refrigerator, allowing the fruits to plump up and absorb maximum flavor. It’s crucial not to drain the liquid; it will be incorporated into the batter.
- Preheat Oven & Prepare Pan: Preheat your oven to a steady 350°F (180°C). Line a 9×5-inch (22.5×12.5 cm) loaf pan with parchment paper, ensuring that the paper overhangs on the sides. This overhang acts as a convenient sling to lift the bread out later. Lightly grease or spray the parchment paper with a nonstick cooking spray to prevent sticking.
- Combine Dry Ingredients: In a separate large bowl, thoroughly whisk together the chickpea flour, almond flour, coconut sugar (or brown sugar), baking powder, baking soda, sea salt, cinnamon, ginger, cardamom, and nutmeg. Whisking ensures all leavening agents and spices are evenly distributed for a consistent bake.
- Mix Wet & Dry Ingredients: Pour the entire contents of the fruit soak (fruit and all the tea liquid) into the bowl with your dry ingredients. Add the melted vegan butter (or vegetable oil) and lemon juice (or vinegar). Stir gently until all ingredients are just combined and a uniform batter forms. Be careful not to overmix, as this can lead to a tough texture in gluten-free breads.
- Bake to Perfection: Carefully spread the prepared batter evenly into your lined loaf pan. Bake in the preheated oven for approximately 55 to 60 minutes. The bread is done when a wooden toothpick inserted into the very center comes out clean. This indicates it’s cooked through without being dry.
- Cool & Serve: Once baked, transfer the pan to a wire rack and allow the bread to cool completely within the pan. This step is vital for gluten-free breads as it helps them firm up and prevents crumbling. Use the parchment paper overhang to gently lift the cooled bread from the pan. Slice into 16 generous portions and savor your homemade Bara Brith.

Storing Your Vegan Bara Brith for Lasting Freshness
One of the many wonderful qualities of this Welsh fruit bread is its excellent keeping quality. It stores beautifully and freezes exceptionally well, allowing you to enjoy a slice whenever a craving strikes. To maintain its optimal freshness, store the completely cooled bread in an airtight container. It will remain fresh at cool room temperature for up to 1 week, in the refrigerator for up to 2 weeks, or you can freeze it for an extended period of up to 6 months.
I can personally attest that a warm cup of your favorite tea is the absolute perfect accompaniment to a slice of Bara Brith. Its subtly sweet, spiced, and fruity notes complement tea beautifully. Beyond being a delightful tea-time treat, it also serves as a not-too-sweet dessert, or a satisfying power snack to fuel your day at any time.
