Ingredients

  • 1/2 cup (118 mL) maple syrup
  • 1/3 cup (85 g) smooth almond butter
  • 1 teaspoon (5 mL) almond extract
  • Optional: 1/4 teaspoon salt
  • 2 cups (200 g) rolled oats (certified gluten-free, as needed)
  • 3/4 cup (84 g) almond flour

Instructions

  1. Preheat your oven to 300°F (150°C). Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, whisk together the almond butter, maple syrup, almond extract, and the optional salt until the mixture is well-blended and smooth. (Tip: Warm cold almond butter slightly in the microwave for a few seconds for easier mixing).
  3. Add the rolled oats and almond flour to the bowl. Stir vigorously until all ingredients are completely blended and the oats are thoroughly coated with the wet mixture.
  4. Spoon the granola mixture onto the prepared baking sheet and spread it into a single, even layer. Ensure the edges are not spread too thinly for even baking.
  5. Bake in the preheated oven for 32 to 38 minutes, stirring gently halfway through the baking time, until the granola is light golden brown and feels completely dry to the touch.
  6. Remove the pan from the oven and immediately transfer it to a cooling rack. While still warm, use a spatula or the back of a large spoon to firmly press down the granola across the entire surface. This crucial step helps form delicious clusters as it cools.
  7. Allow the granola to cool completely, undisturbed, on the cooling rack. Once fully cooled and firm, break it into your desired size of clusters or pieces.

  • Storage: Store the cooled granola in an airtight container in the refrigerator for up to one month. For longer storage, freeze it for up to 6 months.
  • Maple Syrup Alternatives: An equal amount of agave nectar or brown rice syrup can be used. If not strictly vegan, honey is also an option.
