  • 1 tablespoon (6.5 g) flaxseed meal
  • 1/4 cup (28 g) coconut flour (do not pack it; lightly spoon to measure)
  • 1/4 cup (30 g) tapioca flour (or tapioca starch)
  • 1/4 cup (36 g) coconut sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon fine sea salt
  • 2 tablespoons (30 mL) vegetable oil (I used avocado oil)
  • 1 teaspoon vanilla extract
  • TOPPING:
    • 2 teaspoons (6 g) coconut palm sugar
    • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (180°C). Line a cookie sheet with parchment paper.
